Hey guys, so since this is my very first post it is not going to be gorgeous but the recipe will be delicious! So I wanted to make butterbeer cupcakes (recipe coming soon) but my sister is a vegan so I wanted to make the cupcakes vegan. I can't take all the credit for this recipe though. I borrowed most of the recipe from vegan cupcakes take over the world cookbook. I hope you enjoy the recipe as much as I do. Without further ado the recipe. (To read more click on the heading)
Ingredients:
1cup plant based milk (soy, almond, coconut, etc.)
1 teaspoon apple cider vinegar
1/3 cup vegetable oil
3/4 cups sugar
2 1/4 teaspoons vanilla extract
1 1/4 cup all purpose flour
2 tablespoons cornstarch
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Directions: Preheat the oven to 350 degrees. Combine your plant based milk and your apple cider vinegar. Whisk those together. Set this aside for a few minutes. In a separate bowl combine your oil, sugar, and vanilla extract. Then add your plant based milk mixture to the sugar mixture. Mix this with a hand mixer. In another bowl sift your flour, cornstarch, baking powder, baking soda, and salt. Whisk the dry ingredients together. Whisk the dry mixture with the wet mixture. Make sure there are no large lumps. Fill your cupcake liners. Bake your cupcakes for twenty minutes. They should come out slightly golden and smiling delicious. These cupcakes taste as amazing as they look.
